On September 27, 2023, the Southeast Agricultural Research & Extension Center donated 500 pounds of ripe & green tomatoes to the Loft Community Partnership Food Pantry. Combined with other tomatoes donated by area farmers and gardeners and those received through the Central PA Food Bank, we were able to offer families up to 12 tomatoes.
We also had bunches of basil and bottles of balsamic vinegar, so we presented three serving options using those ingredients: caprese salad, bruschetta and panzanella salad. We also had a tasting of the caprese salad sans fresh mozzarella. We encouraged people to go to the Loft Community Kitchen Facebook page for the recipes.
